Mango Achar

The classic. Raw mangoes cut by hand, sun-cured with mustard oil and Mrs Kaur's own masala, then left to mature the old way until every piece is soft, tangy and full of heat.

Made in small batches with no preservatives — the way it has been made in this family for three generations.

• 500g glass jar
• Raw mango, mustard oil, salt, fennel, fenugreek, turmeric, chilli
• Keep in a cool, dry place and always use a dry spoon
